Ferrous gluconate (Ferrous Gluconate), with the molecular formula C12H22FeO14·nH2O (n=0 or 2), has a theoretical iron content of 11.6%. It is a grayish-yellow or light yellow-green crystalline powder with a slight burnt caramel odor. It is readily soluble in water, with a solubility of approximately 8g/100mL at room temperature. As a nutritional supplement (iron fortifier), ferrous gluconate can be widely used in cereal products, dairy products, infant foods, beverages, and health foods.
